Sautéed Chicken in Spicy Chili Bean Sauce (辣豆瓣酱炒雞)
Marinate Ingredients:
- Half chicken, cut into pieces
- 1 Tbsp soy sauce
- 1 tsp white pepper powder
- 1 Tbsp cornstarch
- 1 Tbsp oil
Cooking Ingredients:
- 1/3 red bell pepper, cut into small pieces
- 1/3 green bell pepper, cut into small pieces
- 1/3 yellow bell pepper, cut into small pieces
- 1/4 red onion, cut into small pieces
- 3 scallions, cut into small pieces
- 1 Tbsp oil
- 1.5 Tbsp spicy chili bean sauce
- 1 Tbsp minced garlic
- 1 Tbsp soy sauce
- 1 Tbsp cooking wine
- 1/2 cup chicken broth
- 1 tsp sesame oil
Instructions:
- In a bowl, combine the chicken pieces with soy sauce, white pepper powder, cornstarch, and oil.
- Mix well until the chicken is coated in the marinade.
- Let the chicken marinate for a few hours to enhance the flavors.
- Heat a cooking pan over medium heat and add 1 tablespoon of oil.
- Add spicy chili bean sauce and minced garlic to the pan and sauté for a minute to release the flavors.
- Add the marinated chicken to the pan and stir-fry for a few minutes until it starts to cook.
- Pour in the soy sauce, cooking wine and chicken broth. Stir well.
- Close the lid and let the chicken cook for 10-12 minutes, or until it is fully cooked.
- Add the cut bell peppers, onions, and scallions to the pan.
- Increase the heat to high and cook, stirring continuously, until the sauce thickens and coats the chicken and vegetables.
- Remove from heat and drizzle sesame oil over the dish.
