Braised Chicken with Shiitake Mushrooms (冬菇燜雞)
Marinade Ingredients:
* 1 Tbsp soy sauce
* 1 Tbsp cooking wine
* 1 Tbsp oyster sauce
* 1 tsp white pepper powder
* 2 Tbsp cornstarch
* 1 Tbsp oil
Cooking Ingredients:
* Half chicken, cut into small pieces
* 3 scallions, cut into 2-inch lengths
* 6 shiitake mushrooms, soaked in water until soft and cut in half
* 1 Tbsp oil
* 1 Tbsp minced garlic
* 3 slices of ginger
* 1 Tbsp soy sauce
* 1 tsp dark soy sauce
* 1 Tbsp sugar
* 2 cups chicken broth
* 1 tsp sesame oil
Instructions:
1. In a bowl, combine the chicken pieces with soy sauce, cooking wine, oyster sauce, white pepper powder, cornstarch, and oil. Mix well and let it marinate for a few hours.
2. Meanwhile, soak the shiitake mushrooms in water until they become soft. Once softened, remove stems and cut them in half.
3. Heat a cooking pan over medium heat and add oil, minced garlic, and ginger slices.
4. Add the shiitake mushrooms to the pan and stir-fry for a minute. Then, add the marinated chicken.
5. Cook the chicken until it becomes golden brown on the sides. Then, add soy sauce, dark soy sauce, sugar, and chicken broth to the pan.
6. Close the lid and reduce the heat to medium-low. Allow it to cook for 12-15 minutes, allowing the flavors to meld together.
7. Add the cut scallions to the pan and increase the heat to high, stirring to thicken the sauce.
8. inally, drizzle sesame oil over the dish and it's ready to be served.
