Cashew Chicken
Cashew Chicken
Marinating Ingredients:
- 4 pieces of chicken thighs, deboned and skin removed, cut into 1-inch pieces
- 1 tablespoon fish sauce
- 1 tablespoon cooking wine
- 1 teaspoon white pepper powder
- 1 tablespoon cornstarch
- 1 tablespoon oil
Cooking Ingredients:
- 2 cups broccoli
- 1 tablespoon oil
- 1 tablespoon minced garlic
- 1 tablespoon fish sauce
- 1 tablespoon sugar
- 1 tablespoon oyster sauce
- Pinch of white pepper powder
- 1 cup chicken broth
- 1/2 cup cashew nuts
- 1 teaspoon sesame oil
Instructions:
- Debone and de-skin the chicken thighs, then cut them into 1-inch pieces.
- In a bowl, combine the chicken pieces with fish sauce, cooking wine, white pepper powder, cornstarch, and oil. Mix well to ensure the chicken is evenly coated. Marinate the chicken for a few hours.
- In the meantime, bring a pot of water to a boil and blanch the broccoli for about a minute. Remove the broccoli from the boiling water and transfer it to a serving plate.
- Heat a cooking pan over medium heat and add 1 tablespoon of oil. Once the oil is hot, add the minced garlic and stir-fry until fragrant.
- Add the marinated chicken to the pan and stir-fry for a few minutes until it starts to brown.
- Add fish sauce, sugar, oyster sauce, a pinch of white pepper powder, and chicken broth to the pan. Continue cooking until the chicken is fully cooked, which should take about 3-5 minutes.
- Add the cashew nuts to the pan and mix them with the chicken and sauce.
- To thicken the sauce, prepare a slurry by mixing cornstarch with a small amount of water. Add the slurry to the pan and stir well until the sauce thickens.
- Finally, drizzle sesame oil over the dish and place the chicken and cashews on top of the broccoli.
- Your chicken and cashew stir-fry is now ready to be served. Enjoy!
