Cashew Chicken

Marinating Ingredients:

  • 4 pieces of chicken thighs, deboned and skin removed, cut into 1-inch pieces
  • 1 tablespoon fish sauce
  • 1 tablespoon cooking wine
  • 1 teaspoon white pepper powder
  • 1 tablespoon cornstarch
  • 1 tablespoon oil

Cooking Ingredients:

  • 2 cups broccoli
  • 1 tablespoon oil
  • 1 tablespoon minced garlic
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 tablespoon oyster sauce
  • Pinch of white pepper powder
  • 1 cup chicken broth
  • 1/2 cup cashew nuts
  • 1 teaspoon sesame oil

Instructions:

  1. Debone and de-skin the chicken thighs, then cut them into 1-inch pieces.
  2. In a bowl, combine the chicken pieces with fish sauce, cooking wine, white pepper powder, cornstarch, and oil. Mix well to ensure the chicken is evenly coated. Marinate the chicken for a few hours.
  3. In the meantime, bring a pot of water to a boil and blanch the broccoli for about a minute. Remove the broccoli from the boiling water and transfer it to a serving plate.
  4. Heat a cooking pan over medium heat and add 1 tablespoon of oil. Once the oil is hot, add the minced garlic and stir-fry until fragrant.
  5. Add the marinated chicken to the pan and stir-fry for a few minutes until it starts to brown.
  6. Add fish sauce, sugar, oyster sauce, a pinch of white pepper powder, and chicken broth to the pan. Continue cooking until the chicken is fully cooked, which should take about 3-5 minutes.
  7. Add the cashew nuts to the pan and mix them with the chicken and sauce.
  8. To thicken the sauce, prepare a slurry by mixing cornstarch with a small amount of water. Add the slurry to the pan and stir well until the sauce thickens.
  9. Finally, drizzle sesame oil over the dish and place the chicken and cashews on top of the broccoli.
  10. Your chicken and cashew stir-fry is now ready to be served. Enjoy!
