Eggplant with Garlic Sauce
Marinating Ingredients:
* 8 ounces Ground Pork
* 1 Tbsp Soy Sauce
* 1 Tbsp Cornstarch
* 1 Tbsp Oil
Cooking Ingredients:
* 1 Tbsp Oil
* 1 Tbsp Minced Garlic
* 3 Eggplant, cut into 2-inch pieces
* 3 Scallions, cut into 2-inch pieces
* 1 Tbsp Soy Sauce
* 1 Tbsp Sugar
* 1 Tbsp Rice Vinegar
* 1 tsp White Pepper
* 1 Tbsp Red Chili Oil
* 1/2 cup Chicken Broth
* 1 Tbsp Cornstarch, mixed with 2 Tbsp Water
* 1 tsp Sesame Oil
Instructions:
1. In a bowl, combine ground pork, soy sauce, cornstarch, and oil. Mix well until the pork is evenly coated. Let it marinate for at least 20 minutes.
3. Heat a frying pan over medium heat. Add 1 tablespoons of oil and minced garlic. Stir-fry until fragrant.
4. Add the marinated ground pork to the pan and cook until it is medium done.
5. Add the eggplant and shredded bamboo shoots to the pan with the pork. Stir-fry for a few minutes until the eggplant starts to soften.
6. In a small bowl, mix together soy sauce, sugar, rice vinegar, white pepper, and red chili oil. Pour the mixture over the pork and eggplant. Add water and stir well.
7. Add the cornstarch mixture to thicken the sauce. Stir well to combine until the sauce has thickened.
8. Add the chopped scallions and sesame oil. Stir everything together.
