Claypot Seafood and Beef with Cellophane Noodles
Ingredients:
* 2 small packages of cellophane noodles (glass noodles)
* 4 cups of Napa cabbage, cut into 2-inch pieces
* 12 headless medium-sized shrimp
* 8 mussels
* 2 cups of squid
* 4 oz of hot-pot beef (thinly sliced beef with medium fat)
* 1 Tbsp minced garlic
* 1 Tbsp minced ginger
* 2 Tbsp chopped scallions
* 2 Tbsp hot oil
* 2 Tbsp soy sauce
* 2-3 cups chicken broth
Instructions:
1. Soak the cellophane noodles in water until soft. Set them aside.
2. Cut the Napa cabbage into 2-inch pieces. Set it aside.
3. Prepare the shrimp, mussels, and squid. Set them aside.
4. Prepare the hot-pot beef by thinly slicing it. Set it aside.
5. In a big bowl, mix the minced garlic, minced ginger, and chopped scallions. Add hot oil and soy sauce to the mixture. Set it aside.
6. In a claypot, place the Napa cabbage at the bottom.
7. Add the soaked glass noodles on top of the cabbage.
8. Arrange the seafood (shrimp, mussels, and squid) on top of the glass noodles.
9. Pour 2-3 cups of chicken broth into the claypot.
10. Heat the claypot over medium heat until the chicken broth boils. Stir the bottom to prevent burning the cabbage.
11. Add the hot-pot beef to the claypot and mix it with the seafood and glass noodles. Cover the pot and continue cooking for couple minutes.
12. Add the minced garlic, ginger, and scallion mixture on top of everything. Mix it gently.
13. Your Claypot Glass Noodles with Beef and Seafood is now ready to be served. Enjoy!
