PREPARAZIONE

L'ociu casgiu è un prodotto tipicamente gallurese, ottenuto dalla panna del latte, che spurga l'eccesso di grasso durante la cottura della mazza frissa.

Fuso e conservato in appositi recipienti, veniva usato come sostituto dell'olio e dello strutto.
