Sweet and Sour Pulled Pork
Ingredients:
- 2.5-3 pounds pork shoulder, trimmed of excessive fat
- 3 tablespoons soy sauce
- 3 tablespoons rice vinegar
- 4 ounces rock sugar
- 2 star anises
- 4 slices ginger
- 3 cloves garlic
- 2 bay leaves
- 3 cups water
- 2 tablespoons cornstarch
- 2 tablespoons water
Instructions:
- Prepare the pork shoulder by trimming off any excessive fat.
- In an Instant Pot, combine the trimmed pork shoulder, soy sauce, rice vinegar, rock sugar, star anises, ginger slices, garlic cloves, bay leaves, and water.
- Set the Instant Pot to "Stew" mode and select high heat. Cook for 2 hours and 30 minutes.
- Once the cooking time is complete, allow the Instant Pot to naturally release pressure for 30 minutes.
- Remove the cooked pork shoulder from the Instant Pot and use two forks to pull it into small pieces.
- Strain the remaining liquid from the Instant Pot using a strainer and transfer it to a separate cooking pot.
- Place the cooking pot with the sauce over medium heat and bring it to a boil.
- In a small bowl, mix the cornstarch with water to create a slurry. Add the slurry to the boiling sauce and stir continuously until the sauce thickens.
- Pour the thickened sweet and sour sauce over the pulled pork.
- The Sweet and Sour Pulled Pork is now ready to be served. Enjoy!
