Cheesy mushroom burgers
These meat-free burgers really deliver on flavour and are on the table in less than 30 minutes. They pack in 2 of your 5 a day too.

Ingredients:
- 3 tbsp Essential Olive Oil
- 2 Essential Leeks, trimmed and thinly sliced
- 1 tsp fresh thyme leaves (optional)
- 100g Essential Cambozola Blue Brie, cut into 8 slices
- 2 clove/s garlic, crushed
- 8 Waitrose Large Flat Mushrooms, cleaned and trimmed
- 4 Waitrose Brioche Burger Buns (or Essential White Floured Baps)
- 4 tbsp mustard or garlic mayonnaise
- 1 Essential Slicing Tomato, cut into 4 thick slices
Method:
- Preheat the grill to high. Heat 1½ tbsp oil in a frying pan over a medium heat. Add the leeks and a pinch of salt; cook for 8-10 minutes until soft. Stir in the thyme leaves, if using, then turn off the heat and lay the slices of Cambozola over the top; set aside.
- Meanwhile, mix the remaining 1½ tbsp oil with the garlic. Brush all over the mushrooms, season and lay on a large foil-lined baking tray. Grill for 3-4 minutes on each side, set aside and grill the buns for 30 seconds on each side. Put the leek mixture and cheese slices on top of the mushrooms and grill until the cheese has melted.
- To build the burgers, spread the base of each bun with mayonnaise then place a slice of tomato on top. Add two mushrooms and finish with the bun lid. Serve immediately
