Shrimp Udon Stir Fry

Marinating Ingredients:

  • 8 pieces of shrimp, peeled and deveined
  • Pinch of salt and pepper
  • 1 tsp of cornstarch
  • 1 tsp of oil

Cooking Ingredients:

  • 1/2 yellow onion, sliced into strips
  • 1 carrot, sliced into strips
  • 1/2 green bell pepper, sliced into strips
  • 1/2 red bell pepper, sliced into strips
  • 2 tbsp oil, divided
  • 1 tbsp minced garlic
  • Udon noodles
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1 tsp sesame oil

Instructions:

  1. In a bowl, season the shrimp with a pinch of salt and pepper, cornstarch and oil. Set aside.
  2. Heat a pan over medium heat and add 1 tbsp of oil and minced garlic.
  3. Add the shrimp to the pan and cook until golden brown on each side (about 1 minute per side). Remove the shrimp from the pan and set aside.
  4. In the same pan, add another 1 tbsp of oil and then add udon noodles and the sliced vegetables (onion, carrot, green bell pepper, red bell pepper).
  5. Stir-fry the noodles and vegetables for a few minutes until they start to soften.
  6. Add soy sauce, oyster sauce, and sugar to the pan. Continue to stir-fry for another minute.
  7. Add the cooked shrimp back to the pan and stir-fry for an additional minute.
  8. Drizzle sesame oil over the top of the stir-fry and give it a final toss.
  9. Your delicious Shrimp Udon Stir Fry is now ready to be served! Enjoy!
