Vegetables Omelette
Ingredients
- 1 cup red bell pepper, sliced into strips
- 1 cup carrot, sliced into strips
- 1 cup mushrooms, sliced
- 1 cup yellow onion, sliced
- 1 cup scallion, sliced
- 2 cups green cabbage, sliced into strips
- 2 cups bean sprouts
- 4 eggs, scrambled
- 1 tsp salt
- 1 tsp black pepper
- 2 Tbsp oil
Instructions
- Slice all the vegetables into strips and set them aside.
- In a separate bowl, scramble the eggs and set them aside.
- Mix all the sliced vegetables and bean sprouts in a large bowl. Add the scrambled eggs, salt, and black pepper to the vegetables and mix well.
- Heat a non-stick pan over medium-low heat and add 2 Tbsp of oil.
- Using a large spoon, add a portion of the mixed vegetable and egg mixture to the pan. Do not stir, and let it cook until the bottom is golden brown. Flip the omelette over and cook until the other side is also golden brown.
- Repeat step 5 until all the mixed vegetables and eggs are used up.
- Serve the vegetable omelette hot as a healthy breakfast or lunch option.
