Char Siu Fried Rice (叉燒炒飯)
Char Siu Fried Rice (叉燒炒飯)
Ingredients:
- 4 cups cooked white rice, preferably leftover and cooled
- 6 ounces Char Siu (Chinese BBQ pork), cubed
- 2 eggs, beaten
- 1 tsp salt
- 1 tsp sesame oil
- 2 Tbsp oil
- 1 cup frozen peas and carrots, thawed
- 1 Tbsp soy sauce
Instructions:
- In a large bowl, fluff up the cooked white rice with a fork and set it aside. If using leftover rice, make sure it has cooled down before using it.
- Cut the Char Siu into small cubes and set them aside.
- In a small bowl, beat the eggs together with 1 tsp salt and 1 tsp sesame oil.
- Heat a wok or large skillet over medium heat and add 2 Tbsp of oil.
- When the oil is hot, pour in the beaten eggs and stir-fry for about 10 seconds, until they start to set.
- Add the cooked white rice to the pan with the eggs and continue to stir-fry for 3-5 minutes until the rice is heated through and the eggs are well mixed in.
- Add the cubed Char Siu and thawed peas and carrots to the pan and stir-fry for an additional 2 minutes.
- Turn the heat to high and add 1 Tbsp of soy sauce to the pan. Stir-fry for one more minute until everything is well combined and heated through.
- Remove from heat and serve the Char Siu Fried Rice hot as a main dish or side dish. Enjoy!
