Salt and Pepper Chicken
Salt and Pepper Chicken
Marinade Ingredients:
- 5 pieces of chicken thighs, excess fat trimmed and deboned, cut into large pieces (6 pieces per thigh)
- 1 Tbsp soy sauce
- 1 tsp white pepper powder
- 1 Tbsp cooking wine
- 3 Tbsp cornstarch
- 1 Tbsp oil
Cooking Ingredients:
- 1 cup jalapeño pepper, chopped
- 1 cup red bell pepper, chopped
- 1 cup yellow onion, chopped
- 1 tsp oil
- 1 Tbsp minced garlic
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp sesame oil
Instructions:
- In a mixing bowl, combine the chicken pieces with soy sauce, white pepper powder, cooking wine, cornstarch, and oil. Mix well to ensure that each piece is coated evenly. Cover the bowl with plastic wrap and marinate the chicken for a few hours in the fridge.
- Preheat the air fryer at 350˚F. Once it is heated, place the marinated chicken pieces into the fryer and cook for 15 minutes. Then, increase the temperature to 400˚F and continue to cook for 12 minutes. Flip the chicken pieces over halfway through the cooking process. Once done, set aside.
- Heat a cooking pan over medium heat with 1 tsp of oil and minced garlic. Add the chopped yellow onions, jalapeño pepper, and red bell pepper. Cook for a couple of minutes until the onions turn translucent and the peppers are slightly softened.
- Add the cooked chicken pieces to the pan and sprinkle 2 tsp of salt and 1 tsp of black pepper over the chicken. Toss the chicken pieces and vegetables together until the chicken is evenly coated with seasoning.
- Drizzle sesame oil over the dish and stir. The salt and pepper chicken is now ready to serve. Enjoy!
