Pine Nut Chicken Wrap
Marinating ingredients:
- 2 chicken breasts, cut into small dices
- 1 Tbsp soy sauce
- 1 tsp white pepper powder
- 1 Tbsp cornstarch
- 1 Tbsp oil
Cooking ingredients:
- 1 Tbsp oil
- 1 Tbsp minced garlic
- 1 Tbsp soy sauce
- 2 Tbsp Hoisin sauce
- 1 Tbsp cooking wine
- 2 Tbsp chicken broth
- 1 tsp sesame oil
- 1/4 cup pine nuts
Wrapping ingredients:
- 1 carrot, cut into thin strips
- 1 cucumber, cut into thin strips
- 4 scallions, cut into thin strips
- 1 cup cilantro, cut into small pieces
- Lettuce leaves, pancake or tortilla wraps
Instructions:
- In a bowl, mix together the chicken, soy sauce, white pepper powder, cornstarch, and oil. Let the chicken marinate for a few hours.
- Heat a cooking pan over medium heat with 1 Tbsp of oil and minced garlic.
- Add the marinated chicken to the pan and cook until slightly browned. Then, add 1 Tbsp of soy sauce, 2 Tbsp of Hoisin sauce, 1 Tbsp of cooking wine, and 2 Tbsp of chicken broth. Continue cooking for 3-5 minutes until the chicken is well done.
- Add 1 tsp of sesame oil and 1/4 cup of pine nuts to the chicken in the pan. Stir until everything is well combined. Set aside in a serving bowl.
- Cut the carrot, cucumber, and scallions into thin strips.
- To assemble the wrap, place 1 tsp of Hoisin sauce with cut carrot, cucumber and scallion strips onto a lettuce leaf, pancake or tortilla wrap. Add some of the chicken and pine nut mixture, a piece of cilantro on the top.
- Fold the lettuce leaf, pancake or tortilla wrap tightly around the filling.
