Shrimp and Char Siu Rice Noodle Stir-Fry

Marinating ingredients:

  • 1 pound shrimp, peeled and deveined
  • 1 tsp salt
  • 1/2 tsp white pepper powder
  • 1 Tbsp cornstarch
  • 1 Tbsp oil

Cooking ingredients:

  • 8 ounces dried rice noodles
  • 6 ounces Char Siu (Chinese BBQ pork), sliced into strips
  • 1/4 green bell pepper, sliced into strips
  • 1/4 red bell pepper, sliced into strips
  • 1/2 yellow onion, sliced into strips
  • 1/2 carrot, sliced into strips
  • 2 eggs, scrambled
  • 3 Tbsp oil, divided
  • 1 Tbsp soy sauce
  • 1 tsp fish sauce
  • 1 tsp salt
  • 1 tsp turmeric powder
  • 1 tsp yellow curry powder
  • 1 tsp sesame oil

Instructions:

  1. In a bowl, mix together the shrimp, 1 tsp salt, 1/2 tsp white pepper powder, 1 Tbsp cornstarch, and 1 Tbsp oil. Marinate for at least 30 minutes.
  2. In a large bowl, soak the rice noodles in hot water for 10-15 minutes, or until softened. Rinse the noodles in cold water and set them aside to dry.
  3. Heat a pan over medium heat and add 1 Tbsp of oil. Cook the shrimp for 2-3 minutes on each side, until golden brown. Remove the shrimp from the pan and set them aside.
  4. Add the sliced Char Siu, green and red bell peppers, onion, and carrot to the pan. Stir-fry for 2-3 minutes until the vegetables are tender. Remove the vegetables from the pan and set them aside.
  5. In the same pan, add another tablespoon of oil and stir-fry the scrambled eggs until they are cooked. Remove the eggs from the pan and set them aside.
  6. Add the remaining tablespoon of oil to the pan. Add the rice noodles and stir-fry for 2-3 minutes until they are heated through.
  7. Add the soy sauce, fish sauce, 1 tsp salt, turmeric powder, and yellow curry powder to the pan with the rice noodles. Mix well and stir-fry for another 1-2 minutes.
  8. Add the cooked shrimp, Char Siu, vegetables, and scrambled eggs back to the pan with the noodles. Stir-fry everything together for another 2-3 minutes until everything is heated through.
  9. Finally, drizzle the sesame oil over the top of the stir-fry and give it one last stir.
  10. Serve hot and enjoy your Shrimp and Char Siu Rice Noodle Stir-Fry!
