Shrimp and Char Siu Rice Noodle Stir-Fry
Shrimp and Char Siu Rice Noodle Stir-Fry
Marinating ingredients:
- 1 pound shrimp, peeled and deveined
- 1 tsp salt
- 1/2 tsp white pepper powder
- 1 Tbsp cornstarch
- 1 Tbsp oil
Cooking ingredients:
- 8 ounces dried rice noodles
- 6 ounces Char Siu (Chinese BBQ pork), sliced into strips
- 1/4 green bell pepper, sliced into strips
- 1/4 red bell pepper, sliced into strips
- 1/2 yellow onion, sliced into strips
- 1/2 carrot, sliced into strips
- 2 eggs, scrambled
- 3 Tbsp oil, divided
- 1 Tbsp soy sauce
- 1 tsp fish sauce
- 1 tsp salt
- 1 tsp turmeric powder
- 1 tsp yellow curry powder
- 1 tsp sesame oil
Instructions:
- In a bowl, mix together the shrimp, 1 tsp salt, 1/2 tsp white pepper powder, 1 Tbsp cornstarch, and 1 Tbsp oil. Marinate for at least 30 minutes.
- In a large bowl, soak the rice noodles in hot water for 10-15 minutes, or until softened. Rinse the noodles in cold water and set them aside to dry.
- Heat a pan over medium heat and add 1 Tbsp of oil. Cook the shrimp for 2-3 minutes on each side, until golden brown. Remove the shrimp from the pan and set them aside.
- Add the sliced Char Siu, green and red bell peppers, onion, and carrot to the pan. Stir-fry for 2-3 minutes until the vegetables are tender. Remove the vegetables from the pan and set them aside.
- In the same pan, add another tablespoon of oil and stir-fry the scrambled eggs until they are cooked. Remove the eggs from the pan and set them aside.
- Add the remaining tablespoon of oil to the pan. Add the rice noodles and stir-fry for 2-3 minutes until they are heated through.
- Add the soy sauce, fish sauce, 1 tsp salt, turmeric powder, and yellow curry powder to the pan with the rice noodles. Mix well and stir-fry for another 1-2 minutes.
- Add the cooked shrimp, Char Siu, vegetables, and scrambled eggs back to the pan with the noodles. Stir-fry everything together for another 2-3 minutes until everything is heated through.
- Finally, drizzle the sesame oil over the top of the stir-fry and give it one last stir.
- Serve hot and enjoy your Shrimp and Char Siu Rice Noodle Stir-Fry!
