Braised Duck
Ingredients:
- Half duck
- Kitchen paper towel
- 6 cloves of garlic
- 3 large slices of ginger
- 3 star anises
- 3 bay leaves
- 1 cinnamon stick
- 1 tablespoon of peppercorns
- 2 cups of chicken broth
- 2 cups of water
- 1 bundle of scallion
- 2 tablespoons of soy sauce
- 1 tablespoon of dark soy sauce
- 1 tablespoon of cooking wine
- 1 tablespoon of oyster sauce
- 1 tablespoon of sugar
- 1 teaspoon of white pepper powder
Instructions:
- Start by patting dry the duck skin with kitchen paper towel.
- Cook the duck in an air fryer at 400˚F for 15 minutes on each side, until golden brown.
- In a medium heat cooking pan, add 1 tablespoon of oil and sauté 6 cloves of garlic, 4 large slices of ginger, 3 star anises, 3 bay leaves, 1 cinnamon stick, and 1 tablespoon of peppercorns until fragrant.
- Add 2 cups of chicken broth, 2 cups of water to the pan and a bundle of scallion.
- Place the duck in the cooking pan, then add 2 tablespoons of soy sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of cooking wine, 1 tablespoon of oyster sauce, 1 tablespoon of sugar, and 1 teaspoon of white pepper powder.
- Turn the heat to medium-low, cover the lid, and let it cook for an hour and 20 minutes, flipping the duck over halfway through.
- Turn the heat to high to reduce and thicken the sauce.
- Once done, take the duck out and cut it into pieces. Pour the remaining sauce on top of the duck. It's now ready to serve.
