Claypot Shrimp, Chicken and Tofu with Vegetables
Ingredients:
- 2 chicken breasts, cut into strips
- 8 pieces of shrimp, peeled and deveined
- Pinch of salt and pepper
- 2 tbsp cornstarch, divided
- 1 tbsp soy sauce
- 1/2 tsp white pepper powder
- 1 tbsp water
- 2 tbsp oil, divided
- 5 shiitake mushrooms, soaked in water until soft, halved
- 3 cups broccoli, cut into small pieces
- 1 cup carrot, cut into small pieces
- 1 box medium firm tofu, cut into 1/2 inch rectangles
- Kitchen paper towels
- 1 tbsp minced garlic
- 1 tbsp oyster sauce
- 1 tsp sugar
- 1.5 cups chicken broth
- Cornstarch mixed with water for thickening
- 1 tsp sesame oil
Instructions:
- Marinate the chicken breast strips with soy sauce, white pepper powder, 2 tbsp cornstarch, water, and 1 tbsp of oil. Let it sit for a few hours.
- Marinate the shrimp with a pinch of salt, pepper, 1 tbsp of cornstarch, and 1 tbsp of oil.
- Heat a claypot or a deep cooking pan over medium heat with 3 tbsp of oil. Pan-fry the tofu until golden brown on each side. Remove from the pan and set aside.
- In the same pan after remove the tofu oil, add 1 tbsp of new oil and minced garlic. Sauté for a moment, then add the marinated chicken. Cook for 5 minutes, then add the shrimp and cook for another minute. Remove from the pan and set aside.
- Add the soaked and halved shiitake mushrooms to the same pan. Sauté for a minute, then add the cut broccoli and carrot. Add soy sauce, oyster sauce, sugar, and chicken broth. Cook until the broccoli becomes soft.
- Add back the cooked chicken, shrimp, and tofu to the pan.
- Thicken the sauce with cornstarch mixed with water, then add sesame oil.
- Transfer the cooked food to a claypot or a serving dish.
