Claypot Shrimp, Chicken and Tofu with Vegetables

Ingredients:

  • 2 chicken breasts, cut into strips
  • 8 pieces of shrimp, peeled and deveined
  • Pinch of salt and pepper
  • 2 tbsp cornstarch, divided
  • 1 tbsp soy sauce
  • 1/2 tsp white pepper powder
  • 1 tbsp water
  • 2 tbsp oil, divided
  • 5 shiitake mushrooms, soaked in water until soft, halved
  • 3 cups broccoli, cut into small pieces
  • 1 cup carrot, cut into small pieces
  • 1 box medium firm tofu, cut into 1/2 inch rectangles
  • Kitchen paper towels
  • 1 tbsp minced garlic
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1.5 cups chicken broth
  • Cornstarch mixed with water for thickening
  • 1 tsp sesame oil

Instructions:

  1. Marinate the chicken breast strips with soy sauce, white pepper powder, 2 tbsp cornstarch, water, and 1 tbsp of oil. Let it sit for a few hours.
  2. Marinate the shrimp with a pinch of salt, pepper, 1 tbsp of cornstarch, and 1 tbsp of oil.
  3. Heat a claypot or a deep cooking pan over medium heat with 3 tbsp of oil. Pan-fry the tofu until golden brown on each side. Remove from the pan and set aside.
  4. In the same pan after remove the tofu oil, add 1 tbsp of new oil and minced garlic. Sauté for a moment, then add the marinated chicken. Cook for 5 minutes, then add the shrimp and cook for another minute. Remove from the pan and set aside.
  5. Add the soaked and halved shiitake mushrooms to the same pan. Sauté for a minute, then add the cut broccoli and carrot. Add soy sauce, oyster sauce, sugar, and chicken broth. Cook until the broccoli becomes soft.
  6. Add back the cooked chicken, shrimp, and tofu to the pan.
  7. Thicken the sauce with cornstarch mixed with water, then add sesame oil.
  8. Transfer the cooked food to a claypot or a serving dish.
