Noodles with Fried Bean Sauce (aka Zhajiangmian 炸醬麵)
Noodles with Fried Bean Sauce (aka Zhajiangmian 炸醬麵)
Ingredients:
- 10 oz pork loin, minced
- 1 Tbsp soy sauce
- Pinch of white pepper powder
- 1 Tbsp cornstarch mixed with water
- 1 Tbsp oil
- 1 cup cucumber, cut into strips
- 1 cup carrot, cut into strips
- 1 yellow onion, chopped
- Flour noodles
- 1 Tbsp minced garlic
- 1 Tbsp cooking wine
- 1 Tbsp bean sauce (豆瓣醬)
- 3 Tbsp sweet bean sauce (甜麵醬)
- 1 tsp sugar
- 1/2 cup chicken broth
- 1 tsp sesame oil
Instructions:
- Mince the pork loin.
- Season the minced pork with soy sauce, white pepper powder, cornstarch mixed with water, and oil.
- Cut the cucumber and carrot into strips and set aside.
- Chop the yellow onion and set aside.
- Boil the flour noodles in hot water for 6-8 minutes, then rinse them in cold water and put them in a serving bowl.
- Heat a cooking pan over medium heat with oil and minced garlic.
- Add the chopped yellow onion and cook for a minute, then add the minced pork and continue cooking for a few minutes.
- Add soy sauce, cooking wine, bean sauce, sweet bean sauce, sugar, and chicken broth to the pan.
- Cook until the meat is well done (another 5-8 minutes), then add sesame oil.
- Place the shredded cucumber and carrot, and the meat sauce on top of the noodles. The Zhajiangmian is now ready to serve.
