Crispy Chicken
1. Boil a pot of hot water slowly pour over the chicken skin
2. Either hang the chicken by using kitchen hooks or let it sit on bake rack for 15 minutes
3. Sprinkle 1 tsp of salt and 1 tsp of white pepper powder, then 2 Tbsp of soy sauce all over the chicken skin
4. Mix 1 tsp of salt, 1 tsp of white pepper powder, 5 star anises, 1 Tbsp of peppercorns, 5 slices of gingers and 3 cut scallions in a large bowl.
5. Put all the above inside the chicken and refrigerate the chicken without cover overnight.
6. Preheat air-fryer for 10 minutes
7. Set air-fryer 325˚F for 35 minutes, brush oil over the skin and flip over half way. (It may take longer depend on the size of the chicken)
8. Set air-fryer 400˚F cook for additional 12 minutes (until the skin turns crispy and golden brown) Ready to serve.
