Pot Stickers with Jalapeño Chili Oil
- Marinate 1.5 pounds of ground pork with 2 Tbsp of soy sauce, 2 Tbsp of oyster sauce, 1 Tbsp of minced ginger, 1 tsp of white pepper powder, 3 Tbsp of chicken broth and 2 Tbsp of sesame oil for few hours.
- Cut 2 jalapeño pepper into small pieces, add 2 Tbsp of boiled hot oil on the top, then add 2 Tbsp of soy sauce and 1 Tbsp of red chili oil. Mix well set aside as dipping sauce
- Slowly add hot water to 3 cups of all purpose flour. Mix well until water fully absorbed by the flour
- Press the dough by hand, add cold water if too dry or add flour if the dough is too wet. Continue this step for 5 minutes
- Let the dough rest for 20 min
- Knead the dough for a minute and cut into small pieces
- Use a rolling pin to roll the dough to 3 inches circle
- Put about 1.5 Tbsp of fillings in the middle and close out as a dumpling shape
- Medium heat cooking pan with 2 Tbsp of oil, then put the dumpling cook for a minute
- Add 2 cups of water/or chicken broth, turn down to low heat and close the lid continue cook for 12 minutes
- Open the lid and turn up to medium-high heat cook until all liquid gone, ready to serve
