Pot Stickers with Jalapeño Chili Oil

  1. Marinate 1.5 pounds of ground pork with 2 Tbsp of soy sauce, 2 Tbsp of oyster sauce, 1 Tbsp of minced ginger, 1 tsp of white pepper powder, 3 Tbsp of chicken broth and 2 Tbsp of sesame oil for few hours.
  2. Cut 2 jalapeño pepper into small pieces, add 2 Tbsp of boiled hot oil on the top, then add 2 Tbsp of soy sauce and 1 Tbsp of red chili oil. Mix well set aside as dipping sauce
  3. Slowly add hot water to 3 cups of all purpose flour. Mix well until water fully absorbed by the flour
  4. Press the dough by hand, add cold water if too dry or add flour if the dough is too wet. Continue this step for 5 minutes
  5. Let the dough rest for 20 min
  6. Knead the dough for a minute and cut into small pieces
  7. Use a rolling pin to roll the dough to 3 inches circle
  8. Put about 1.5 Tbsp of fillings in the middle and close out as a dumpling shape
  9. Medium heat cooking pan with 2 Tbsp of oil, then put the dumpling cook for a minute
  10. Add 2 cups of water/or chicken broth, turn down to low heat and close the lid continue cook for 12 minutes
  11. Open the lid and turn up to medium-high heat cook until all liquid gone, ready to serve
