Braised Chicken with Dried Bean Curds and Shiitake Mushrooms
- Cut 2 chicken leg quarters into small pieces, use kitchen paper towel to dry up chicken
- Marinate chicken with pinch of salt and white pepper powder, 1 Tbsp of soy sauce, 1 Tbsp of cornstarch and 1 Tbsp of oil
- Soak 4 pieces of shiitake mushrooms until soft, remove stem and cut into small pieces. Set aside
- Soak 6 pieces of dried bean curds until soft, cut into 3 inches pieces. Set aside
- Medium heat cooking pan with 1 Tbsp of oil and 1 Tbsp of minced garlic
- Add cut shiitake mushrooms stir fry for a minute, then add chicken continue cook for few minutes
- Add 1 Tbsp of soy sauce, 1 Tbsp of oyster sauce, 1 Tbsp of cooking wine, 1 tsp of dark soy sauce, 1 tsp of sugar and 1 cup of chicken broth
- Close the lid, then cook for 8-10 minutes
- Add bean curds, close the lid continue cook for additional 5 minutes
- Add handful of cut scallions. Ready to serve
