Ginger Chicken in Claypot
Ginger Chicken in Claypot
- Cut 2 chicken leg quarters into small pieces, use kitchen paper towel to dry up chicken
- Marinate chicken with pinch of salt and white pepper powder, 1 Tbsp of soy sauce, 2 Tbsp of minced ginger, 1 Tbsp of cooking wine, 1 Tbsp of oyster sauce. After mix well, then 1 Tbsp of cornstarch and 1 Tbsp of oil
- Low heat claypot with 1 Tbsp of oil, then add 8 cloves of garlic, 6 slices of ginger and few pieces of scallions (white portion only)
- Slow cook garlic, ginger and scallion for a minute, then add marinated chicken on the top. (Do not mix or stir)
- Close the claypot lid and low heat cook for 15 minutes
- Add 2 Tbsp of cooking wine on top of the claypot lid (Do not open the lid)
- Continue cook for 5-8 more minutes. Add some cut scallions. Ready to serve.
