PREPARAZIONE

Si mettono le fave a bagno in acqua tiepida dalla sera prima.

Il giorno seguente si incide la buccia per la lunghezza, si condiscono con carne di maiale, salsiccia tipo cotechino, cotenna e lardo tritato con qualche spicchio d'aglio e sale.

Si chiude il recipiente e si lascia finir di cuocere a tegame coperto.
