PREPARAZIONE

Tagliare le cipolle in quarti e metterle in abbondante acqua fredda sino a quando abbiano perso l'agro.

Farle cuocere poi coperte, dopo averle scolate, con olio e sale, preferibilmente in una casseruola di terracotta, a fuoco lento, finché diventano leggermente dorate.
