Braised Spare Ribs
1. Prepare 2 pounds of spare ribs by removing the membrane, and cut it to individual pieces by bone.
2. Add spare ribs with 2 slices of gingers, few pieces of scallions and 1 Tbsp of cooking wine in a large pot of water
3. High heat the cooking pot until water boiled for 5-8 minutes
4. Rinse the ribs in cold water, set aside
5. Low heat cooking pan with 1 Tbsp of oil, then add 2.5 Tbsp of sugar slow cook until the sugar turn red color - keep stirring, do not let the sugar get burn.
6. Add ribs and turn up to medium heat
7. Mix the ribs with the melted sugar to have a nice coating
8. Add 2 Tbsp of soy sauce, 1 Tbsp of cooking wine, 3 star anise, 3 large slices of gingers, 1 Tbsp of peppercorns, 3 bay leaves and 1 cinnamon stick, then add 2-3 cups of water
9. Add salt if needed.
10. Medium low heat cook for an hour, then turn to high heat to dry up/thicken the sauce.
11. Add 1 tsp of sesame oil. Ready to serve
