Mexican Shrimp Cocktail

  1. Chop half red onion, 2 tomatoes, 1 English cucumber, 2 jalapeño pepper and 2 celery sticks into small pieces, set aside
  2. Boil half pound of medium shrimp in hot water for few minutes, then rinse it with cold water
  3. Peel and devein shrimp, set aside
  4. Mix all chopped vegetables with shrimp. then add 1 fresh squeeze lime juice, half cup of ketchup, 2 cups of ground tomato, 1 can of cooked clam with juice
  5. Add 1 tsp of salt, 1 tsp of black pepper, 1 tsp of sugar and 2 tsp of hot sauce (Mexican)
  6. Add handful of chopped cilantro and diced avocado (2)
  7. Put in refrigerator with cover for at least an hour before serving
