Shredded Pork With Garlic Sauce 魚香肉絲
- Cut 6 oz of pork tenderloin into strips
- Marinate shredded pork with 1 Tbsp of soy sauce, pinch of white pepper powder, 1 Tbsp of cornstarch, then 1 Tbsp of oil for an hour
- Soak one cup of wood ear (aka Chinese fungus 木耳) in water until soft, cut to small pieces and set aside
- Soak 6 pieces of shiitake mushrooms in water until soft, remove stem, cut into strips and set aside
- Cut one cup of carrot in strips, set aside
- Cut few scallions into 2 inches strips, set aside
- Medium heat cooking pan with 1 Tbsp of oil, then add 1 Tbsp of minced garlic
- Add pork stir-fry for few minutes, then add all cut vegetables
- Add 1 Tbsp of say sauce, 1 tsp of dark soy sauce (optional), 1 tsp of cooking wine, 1 Tbsp of sugar, 1 Tbsp of rice vinegar, 1 tsp of red chili paste and 1 cup of chicken broth
- Continue stir-fry for additional 3-5 minutes, then add cut scallion
- Add cornstarch mixed with water to thicken the sauce
- Add 1 tsp of sesame oil, ready to serve
