Claypot Braised Chicken with Tofu 豆腐雞球煲
- Debone and deskin 4 pieces of chicken thighs, cut to an inch pieces
- Marinate chicken with 1 Tbsp of soy sauce, 1 Tbsp of cooking wine, 1 tsp of white pepper powder, 1 Tbsp of cornstarch and 1 Tbsp of oil for few hours
- Pan fry medium firm tofu until both sides turn golden brown
- Low heat cooking pan with 1 Tbsp of oil, add 3 large slices of ginger and 6 cloves of garlic cook until favors come out (~2 minutes)
- Add chicken, then turn to medium heat. Cook for 3-5 minutes, then add tofu
- Add 1 Tbsp of soy sauce, 1 Tbsp of cooking wine and 2 cup of chicken broth
- Transfer everything to claypot continue medium heat cook for another 10-12 minutes
- Sprinkle some chopped scallions, ready to serve
