Scallions Pancake 蔥油餅
- Prepare 4 cups of chopped scallions, set aside
- Slowly add hot water to 3 cups of all purpose flour. Mix well until water fully absorbed by the flour
- Press the dough by hand, add cold water if too dry or add flour if the dough is too wet. Continue this step for 5 minutes
- Let the dough rest for 20 min
- Knead the dough for a minute and cut into 4-6 pieces
- Roll the dough to thin circle, make sure sprinkle some flour on both sides
- Add 2-3 Tbsp of oil, then sprinkle 2-3 tsp of salt and 3/4 cup of chopped scallion
- Hand roll the dough to a long strip, then make the strip like a circle
- Use roller to roll the dough to a foot length of pie shape, let it sit for 5 minutes
- Medium heat cooking pan with an inch of oil
- Pan-fry scallion pancake around 3-5 minutes on each side
- Cut and ready to serve
