Scallions Pancake 蔥油餅

  1. Prepare 4 cups of chopped scallions, set aside
  2. Slowly add hot water to 3 cups of all purpose flour. Mix well until water fully absorbed by the flour
  3. Press the dough by hand, add cold water if too dry or add flour if the dough is too wet. Continue this step for 5 minutes
  4. Let the dough rest for 20 min
  5. Knead the dough for a minute and cut into 4-6 pieces
  6. Roll the dough to thin circle, make sure sprinkle some flour on both sides
  7. Add 2-3 Tbsp of oil, then sprinkle 2-3 tsp of salt and 3/4 cup of chopped scallion
  8. Hand roll the dough to a long strip, then make the strip like a circle
  9. Use roller to roll the dough to a foot length of pie shape, let it sit for 5 minutes
  10. Medium heat cooking pan with an inch of oil
  11. Pan-fry scallion pancake around 3-5 minutes on each side
  12. Cut and ready to serve
