Salt & Pepper Chicken Nuggets 椒鹽雞柳

  1. Debone and deskin 4 pieces of chicken thighs, cut to an inch pieces
  2. Marinate chicken with 1 Tbsp of soy sauce, 1 Tbsp of cooking wine, 1 tsp of white pepper powder, 1 Tbsp of cornstarch and 1 Tbsp of oil for few hours
  3. Medium heat cooking pot with half full of oil
  4. Mix 3 Tbsp of cornstarch to the marinated chicken
  5. Put the chicken into hot oil individually, separate them if stick together, cook until golden brown (4-6 minutes)
  6. Take chicken out sit for a minute, then put it back in hot oil for the second round of deep fry around 2 minutes
  7. Medium heat cooking pan with 1 Tbsp of oil, then add 1 Tbsp of minced garlic, 1 Tbsp of chopped yellow onion, 1 Tbsp of chopped scallion and 2 Tbsp of cut red bell pepper cook for a minute
  8. Add chicken, then add 1 tsp of salt, 1 tsp of black pepper, 1 tsp of sugar, pinch of white pepper powder
  9. Toss the chicken for 30 seconds, then add 1 tsp of sesame oil. Ready to serve
