腰果雞丁 Cashew Chicken
- Debone and de-skin 4 pieces of chicken thighs, cut to an inch pieces
- Marinate chicken with 1 Tbsp of fish sauce, 1 Tbsp of cooking wine, 1 tsp of white pepper powder, 1 Tbsp of cornstarch and 1 Tbsp of oil for few hours
- Boil 2 cups of broccoli in hot water for a minute, then set on serving plate
- Medium heat cooking pan with 1 Tbsp of oil and 1 Tbsp of minced garlic
- Add chicken stir-fry for few minutes
- Add 1 Tbsp of fish sauce, 1 Tbsp of sugar, 1 Tbsp of oyster sauce, pinch of white pepper powder and one cup of chicken broth
- Continue cook until chicken is done (3-5 minutes), then add half cup of cashew nuts
- Add cornstarch mixed with water to thicken the sauce
- Add 1 tsp of sesame oil, put chicken and cashew on top of the broccoli. Ready to serve
