Cold Noodles with Hand Pulled Chicken
- Boil fresh Lo Mein noodles cook to ready to use (around 6-8 minutes), rinse in cold water. Set aside
- Boil 6 pieces of chicken drumsticks in a large pot of hot water with 3 slices of gingers and half yellow onion for 20 minutes. Rinse the chicken in cold water
- Hand pull chicken meat from bone, remove skin. Set aside
- Mix 1 Tbsp of minced garlic, 1 Tbsp of minced ginger, 1 chopped red chili pepper, 1 chopped jalapeño pepper and half cup of chopped scallions
- Add pinch of white pepper powder, 1 tsp of hot chili sauce, 1 Tbsp of sesame oil, then add 3 Tbsp of hot oil
- Add 2 Tbsp of soy sauce, then mix well. Set aside
- Mix chicken meat, noodles and spicy sauce in a large bowl.
- Add chopped cilantro on the top. Ready to serve
