Chocolate and Ginger Biscuits

Ingredients

  • 1 & 1/2 cups plain flour
  • 1 Tbsp ginger powder
  • 3 Tbsp cocoa powder
  • 1/2 tsp bicarbonate of soda
  • 1 tsp baking powder
  • 1/2 cup light brown sugar
  • 1/2 cup butter (room temp) 113g
  • 4 Tbsp honey
  • 1/4 tsp salt


Instructions

  1. In a large bowl, sift all the dry ingredients together (except sugar). Add sugar then whisk.
  2. Rub in the butter until you get a crumbly mixture.
  3. Add honey and mix until it forms a dough. Use your hands for this process.
  4. Scoop out the dough using a spoon or an ice cream scoop. Form into balls.
  5. Line the baking tray with parchment paper. Place the dough balls. Slightly flatten each with your palm.
  6. Bake in a preheated oven at 185 degrees Celsius for 13 minutes.

Don’t over bake them otherwise they will be hard like a rock.
