Chocolate and Ginger Biscuits
Ingredients
- 1 & 1/2 cups plain flour
- 1 Tbsp ginger powder
- 3 Tbsp cocoa powder
- 1/2 tsp bicarbonate of soda
- 1 tsp baking powder
- 1/2 cup light brown sugar
- 1/2 cup butter (room temp) 113g
- 4 Tbsp honey
- 1/4 tsp salt
Instructions
- In a large bowl, sift all the dry ingredients together (except sugar). Add sugar then whisk.
- Rub in the butter until you get a crumbly mixture.
- Add honey and mix until it forms a dough. Use your hands for this process.
- Scoop out the dough using a spoon or an ice cream scoop. Form into balls.
- Line the baking tray with parchment paper. Place the dough balls. Slightly flatten each with your palm.
- Bake in a preheated oven at 185 degrees Celsius for 13 minutes.
Don’t over bake them otherwise they will be hard like a rock.
