Lotus Root Soup

  1. Soak 6 pieces of shiitake mushrooms until soft, remove stem. Set aside
  2. Cut lotus root into half an inch pieces, soak in water. Set aside
  3. Cut 4 pieces of organic carrots into pieces, set aside
  4. Put 2-3 pounds of pork ribs (or pork shoulder bone) in a large pot of cold water
  5. Add 3 large slices of ginger and 3 scallions
  6. Turn to high heat until boil, remove brown stuffs
  7. Rinse pork ribs in water, set aside
  8. Boil a large pot of water, add 3 slices of gingers, then add pork ribs and shiitake mushrooms
  9. Turn to medium-low heat cook for an hour
  10. Add cut lotus roots and carrots, continue cook for another 1.5 hours
  11. Add salt as needed. Ready to serve
