Lotus Root Soup
Lotus Root Soup
- Soak 6 pieces of shiitake mushrooms until soft, remove stem. Set aside
- Cut lotus root into half an inch pieces, soak in water. Set aside
- Cut 4 pieces of organic carrots into pieces, set aside
- Put 2-3 pounds of pork ribs (or pork shoulder bone) in a large pot of cold water
- Add 3 large slices of ginger and 3 scallions
- Turn to high heat until boil, remove brown stuffs
- Rinse pork ribs in water, set aside
- Boil a large pot of water, add 3 slices of gingers, then add pork ribs and shiitake mushrooms
- Turn to medium-low heat cook for an hour
- Add cut lotus roots and carrots, continue cook for another 1.5 hours
- Add salt as needed. Ready to serve
