Eggplant with Garlic Sauce 魚香茄子
1. Marinated 12 oz of ground pork with 1 Tbsp of soy sauce, 1 Tbsp of cornstarch and 1 Tbsp of oil
2. Cut 2 eggplant and few scallions into 2 inches pieces
3. Medium heat cooking pan with 1 Tbsp of oil and 1 Tbsp of minced garlic
4. Add ground pork cooked to medium done (2-3 minutes), then add cut eggplant
5. Add 1 Tbsp of soy sauce, 2 Tbsp of sugar, 1 Tbsp of rice vinegar and 1 tsp of red chili sauce, then half cup of water continue cook until eggplant turn soft
6. Add cornstarch mixed with water to thicken the sauce
7. Add handful of scallions, 1 tsp of sesame oil and ready to serve.
