Braised Pork Ribs 紅燒排骨

  1. Add 2 pounds of pork ribs with 2 slices of gingers, few scallions and 1 Tbsp of cooking wine in a large pot of water
  2. Boil the water to high heat for 5 minutes
  3. Rinse the ribs in cold water
  4. Low heat cooking pan with 1 Tbsp of oil, then add 2.5 Tbsp of sugar slow cook the sugar turn red color
  5. Add pork ribs and turn to medium heat
  6. Mix the ribs with the sugar to have a nice coating
  7. Add 2 Tbsp of soy sauce, 3 star anise, 3 slices of gingers, 1 Tbsp of peppercorns, 3 bay leaves and 1 cinnamon stick, then add 1.5 cup of water
  8. Add salt if needed.
  9. Medium low heat cook for 45 minutes, then high heat to dry up the sauce.
  10. Add 1 tsp of sesame oil and sprinkle chopped scallions on the top. Ready to serve
