Deep-Fried Salmon Fish Fillets
- Prepare 6 pieces salmon fillets cut an inch thick
- Marinate salmon fillets with 3 slices of gingers, 1 tsp of white pepper powder, 2 Tbsp of soy sauce, 1 Tbsp of cooking wine overnight in refrigerator
- Take the fish fillets out of refrigerator, use kitchen towel to dry out the sauce on the surface, let it sit for an hour
- Medium heat half pot of oil. Wait until the oil is hot, put the fish in once at a time deep fry until crispy and golden brown (around 3-4 minutes). Set aside
- Low heat cooking pot with 1 cup of water, then add 2 Tbsp of Chinese Shaoxing cooking wine (花雕酒), 1 Tbsp of soy sauce, 1 Tbsp of dark soy sauce, 1 tsp of five spice powder, 1 tsp of white pepper powder, 2 Tbsp of sugar, 1 cut scallion, 2 slices of gingers, 3 star anise, 3 bay leaves, 1 cinnamon stick, 3 dried red chili pepper simmer for 10-15 minutes
- Let the sauce cool off, and use a strainer to keep the sauce only
- Pour the sauce on top of the deep-fried fish fillets, sprinkle some cut cilantro. Ready to serve.
