Deep-Fried Salmon Fish Fillets

  1. Prepare 6 pieces salmon fillets cut an inch thick
  2. Marinate salmon fillets with 3 slices of gingers, 1 tsp of white pepper powder, 2 Tbsp of soy sauce, 1 Tbsp of cooking wine overnight in refrigerator
  3. Take the fish fillets out of refrigerator, use kitchen towel to dry out the sauce on the surface, let it sit for an hour
  4. Medium heat half pot of oil. Wait until the oil is hot, put the fish in once at a time deep fry until crispy and golden brown (around 3-4 minutes). Set aside
  5. Low heat cooking pot with 1 cup of water, then add 2 Tbsp of Chinese Shaoxing cooking wine (花雕酒), 1 Tbsp of soy sauce, 1 Tbsp of dark soy sauce, 1 tsp of five spice powder, 1 tsp of white pepper powder, 2 Tbsp of sugar, 1 cut scallion, 2 slices of gingers, 3 star anise, 3 bay leaves, 1 cinnamon stick, 3 dried red chili pepper simmer for 10-15 minutes
  6. Let the sauce cool off, and use a strainer to keep the sauce only
  7. Pour the sauce on top of the deep-fried fish fillets, sprinkle some cut cilantro. Ready to serve.
