COCONUT BANANA CAKE
Ingredients
- All purpose flour – 1 ½ cup
- Baking powder – ½ tsp
- Baking soda – ½ tsp
- Salt – ¼ tsp
- Egg – 3
- Sugar – 1 cup
- Vegetable oil – ¼ cup
- Vanilla essence – 1 tsp
- Banana (ripe) – 2 (mashed)
- Shredded coconut (fresh) – ¾ cup + 2 tbsp
- Almonds (chopped) – 2 tbsp
Method
- Preheat the oven to 190 degree. Grease a round or square cake tin with butter and dust with flour.
- Combine together all purpose flour, baking powder, baking soda and salt and keep it ready. In another bowl, whisk together egg, sugar, vegetable oil and vanilla essence till well combined. To this add the mashed banana and mix well.
- Add ¾ cup shredded coconut and mix well. Add the flour mixture to this slowly and combine well. Pour this mixture to the dusted cake tin and spread evenly. Sprinkle 2 tbsp coconut and chopped almonds on top and bake it in the preheated oven for 1 hour – 1 hour 10 minutes. Cover it with aluminum foil while baking, after 40 minutes, and bake till done. Check by inserting a tooth pick at the center of the cake, if it comes out clean, the cake is done.
- Remove it from the oven and let it cool for 20 – 25 minutes. Remove the cake to a wire rack and cool it completely. Serve.
