Dim Sum Steamed Beef Tripes with Ginger and Scallions 薑蔥牛柏葉
- Rinse 1.5 pound of beef tripes in cold water several times
- Heat up a large pot of hot water, add 2 large slices of gingers, 3 scallions and 2 Tbsp of cooking wine
- Add beef tripes into the hot water for one minute, then take it out soak in iced water for 15 minutes
- Cut the beef tripes in half an inches thick strips
- Add 1 tsp of salt, 1 tsp of white pepper powder, 1 tsp of chicken bouillon powder, 1 Tbsp of oyster sauce, 2 Tbsp of cornstarch, 1 Tbsp of oil, 2 Tbsp if sesame oil and 1 Tbsp if minced garlic
- Add 1 cup of shredded ginger, 1 cup of shredded scallion and 1 cup of shredded carrot and let it marinate for an hour
- Put beef tripes in a steamer plate, high heat steam for 5-7 minutes. Ready to serve
