Crispy Duck
- Prepare half duck trim out excessive fat
- Rinse the duck in cold water several times
- Use kitchen paper towel to dry the duck
- Season the duck with 6 pieces of gingers, 3 scallions, 1 Tbsp of salt, 1 tsp of white pepper powder, and 1 Tbsp of peppercorns in refrigerator overnight
- Hang the duck by using kitchen hooks and use portable fan to dry the duck skin for several hours
- Pre-heat oven at 350˚F
- Place the duck on oven tray with foil cover cook for 1.5 hours. Flip the duck halfway
- Remove the foil cover continue cook for another 10-15 minutes
- Cut the duck into pieces, serve with cut scallions, cilantro and Hoisin sauce
