Crispy Duck

  1. Prepare half duck trim out excessive fat
  2. Rinse the duck in cold water several times
  3. Use kitchen paper towel to dry the duck
  4. Season the duck with 6 pieces of gingers, 3 scallions, 1 Tbsp of salt, 1 tsp of white pepper powder, and 1 Tbsp of peppercorns in refrigerator overnight
  5. Hang the duck by using kitchen hooks and use portable fan to dry the duck skin for several hours
  6. Pre-heat oven at 350˚F
  7. Place the duck on oven tray with foil cover cook for 1.5 hours. Flip the duck halfway
  8. Remove the foil cover continue cook for another 10-15 minutes
  9. Cut the duck into pieces, serve with cut scallions, cilantro and Hoisin sauce
