Braised Duck 醬鴨
Braised Duck 醬鴨
- Prepare half duck trim out excessive fat
- Rinse the duck in cold water several times
- Use kitchen paper towel to dry the duck
- Medium heat cooking pan with 3 Tbsp of oil
- Pan sear duck until the skin turns golden brown (~15 minutes)
- Remove oil from the pan
- Add 1 Tbsp of soy sauce, 1.5 Tbsp of dark soy sauce, 1 tsp of salt, 2 Tbsp of cooking wine, 3 large slices of ginger, 3 scallions, 4 star anises, 1 Tbsp of peppercorn, 1 cinnamon stick, 4 bay leaves, 5 oz of rock sugar and 4 cups of water
- Turn to low heat and cook for 1.5 hours
- Pour the sauce on top of duck every 15 minutes
- Cut the duck into pieces and pour sauce on top, ready to serve
