Braised Duck 醬鴨

  1. Prepare half duck trim out excessive fat
  2. Rinse the duck in cold water several times
  3. Use kitchen paper towel to dry the duck
  4. Medium heat cooking pan with 3 Tbsp of oil
  5. Pan sear duck until the skin turns golden brown (~15 minutes)
  6. Remove oil from the pan
  7. Add 1 Tbsp of soy sauce, 1.5 Tbsp of dark soy sauce, 1 tsp of salt, 2 Tbsp of cooking wine, 3 large slices of ginger, 3 scallions, 4 star anises, 1 Tbsp of peppercorn, 1 cinnamon stick, 4 bay leaves, 5 oz of rock sugar and 4 cups of water
  8. Turn to low heat and cook for 1.5 hours
  9. Pour the sauce on top of duck every 15 minutes
  10. Cut the duck into pieces and pour sauce on top, ready to serve
