Lobster Noodle Soup 龍蝦湯麵
- Prepare 2 lobsters (around 1.5 pounds each), lobster tails cut into 6 pieces, lobster heads cut into half. Clean the lobster meat with 2 Tbsp of salt, rinse it in cold water.
- Use kitchen paper towel to dry the lobster meat
- Light coating lobster with corn starch
- Medium heat cooking pot with an inch of oil
- Deep fry lobster once the oil is hot (~3-4 minutes), take lobster out set aside
- Medium heat cooking pan with 1 Tbsp of oil, add 3 large slices of gingers and 3 cut scallions
- Add lobster, then add 1 Tbsp of cooking wine
- Add 2 cups of chicken broth, pinch of salt and pepper. Close the lid cook for 4 minutes
- Add cornstarch mixed with water to thicken the sauce
- Put lobster on top of the pre-cooked noodles, ready to serve
