Minced Pork Noodles 炸醬麵
- Cut 8 oz of pork sirloin into real small pieces.
- Marinate pork with 1 Tbsp of soy sauce, pinch of white pepper, 1 Tbsp of cornstarch and 1 Tbsp of oil for few hours
- Cut half cucumber and scallion into strips, set aside
- Pre-cook the dry flour noodles in a big pot of boiling water for 8 minutes, rinse it with cold water. Set aside
- Medium heat cooking pan with 1 Tbsp of oil
- Add pork sautéed for few minutes, then add 1 Tbsp of cooking wine
- Add 1 Tbsp of bean sauce (豆瓣醬) with 2 Tbsp of minced garlic and 1 chopped yellow onion cook for a minute
- Add 1 Tbsp of soy sauce, 1 tsp of dark soy sauce, 3 Tbsp of sweet bean sauce (甜麵醬), half cup of chicken broth and half cup of hot water.
- Mix well and turn down to medium low heat cook for few more minutes
- Add 1 tsp of sesame oil
- Mix a bowl of noodles with cut cucumber and scallion, few cut cilantro and 2 scopes of minced pork sauce. Ready to serve
