Braised Pork Trotters 紅燒豬手
- Soak 2 pounds of pork trotters (already cut) in cold water with 1 Tbsp of salt for 30 minutes
- Boil pork trotters in hot water with 3 large slices of ginger, 3 pieces of scallions and 2 Tbsp of cooking wine for 10 minutes
- Rinse the pork trotters with cold water, set aside
- Low heat cooking pot with 1 Tbsp of oil and 3 Tbsp of sugar
- Keep stirring until sugar melt and turn to red color. (Make sure low heat and not over burn the sugar)
- Add pork trotters stir-fry for few minute
- Add 2 cups of hot water, then 1 Tbsp of soy sauce, 1 Tbsp of oyster sauce, 1 Tbsp of cooking wine, 1 tsp of dark soy sauce, 1 tsp of white pepper powder, 4 star anises, 1 Tbsp of peppercorns, 1 cinnamon stick, 4 bay leaves, 3 slices of gingers, 3 cloves of garlic.
- Simmer the pork trotters for 1 hour 30 minutes, check it every 20 minutes and turn it over
- Once done, let it cool off for 10 minutes before serving
