Cold Sliced Beef 涼拌牛肉

  1. Prepare 2 pounds of beef ribs or pot roast by trim out the fat
  2. Boil beef with 3 large slices of ginger, 1 cut yellow onion and 2 Tbsp of cooking wine in a large pot of water for 10-15 minutes
  3. Rinse the beef with cold water
  4. Fill pot with 2 cups of water, then add beef, 2 slices of ginger, 2 star anises, 1 cut yellow onion, 3 bay leaves, half Tbsp of peppercorns, 1 tsp of salt, 1 tsp of white pepper powder
  5. Set Instant pot in “Stew” for 1 hours 30 minutes
  6. Once its done, take the beef out and let it sit cool for an hour
  7. Cut beef into slices, set aside
  8. Cut jalapeño, scallions and fresh red chili pepper into slices, set aside
  9. Mix 1 Tbsp of soy sauce, 2 Tbsp of sugar, 1 Tbsp of rice vinegar, 1 Tbsp of water, 1 Tbsp of minced garlic, 1 Tbsp of sesame oil and cut jalapeño pepper, scallions and fresh red chili pepper
  10. Add beef mix with the sauce, ready to serve
