Cold Sliced Beef 涼拌牛肉
- Prepare 2 pounds of beef ribs or pot roast by trim out the fat
- Boil beef with 3 large slices of ginger, 1 cut yellow onion and 2 Tbsp of cooking wine in a large pot of water for 10-15 minutes
- Rinse the beef with cold water
- Fill pot with 2 cups of water, then add beef, 2 slices of ginger, 2 star anises, 1 cut yellow onion, 3 bay leaves, half Tbsp of peppercorns, 1 tsp of salt, 1 tsp of white pepper powder
- Set Instant pot in “Stew” for 1 hours 30 minutes
- Once its done, take the beef out and let it sit cool for an hour
- Cut beef into slices, set aside
- Cut jalapeño, scallions and fresh red chili pepper into slices, set aside
- Mix 1 Tbsp of soy sauce, 2 Tbsp of sugar, 1 Tbsp of rice vinegar, 1 Tbsp of water, 1 Tbsp of minced garlic, 1 Tbsp of sesame oil and cut jalapeño pepper, scallions and fresh red chili pepper
- Add beef mix with the sauce, ready to serve
