Mongolian Chicken
1. Debone and de-skin 3 pieces of chicken thighs, cut into large pieces
2. Marinate chicken thighs with 1 Tbsp of soy sauce, pinch of white pepper powder, 1 Tbsp of cornstarch, then 1 Tbsp of oil for few hours
3. Cut 1 yellow onion into strips, set aside
4. Cut 4 scallions into 2 inches, set aside
5. Medium heat cooking pan with 1 Tbsp of oil with 1 Tbsp of minced garlic and 6-8 pieces of dry red chili pepper
6. Once the dry red chili pepper turn brown, add chicken
7. Stir-fry chicken for 4-5 minutes, add 1 Tbsp of cooking wine
8. Add cut yellow onion, then 1 Tbsp of soy sauce, 1 Tbsp of sugar, half Tbsp of oyster sauce, half tsp of black pepper continue stir-fry for few minutes
9. Add cut scallions and 1 tsp of sesame oil. Ready to serve
