Beef Noodles in Clear Soup 清湯牛肉麵
- Prepare 2.5 pounds of beef ribs by trim out the fat
- Boil beef ribs with 3 large slices of ginger, 1 cut yellow onion and 2 Tbsp of cooking wine in a large pot of water for 10-15 minutes
- Rinse the beef ribs with cold water
- Fill half pot of water, then add beef ribs, 2 slices of ginger, 2 star anises, 1 cut yellow onion, 3 bay leaves, half Tbsp of peppercorns, 1 tsp of salt, 1 tsp of white pepper powder
- Set Instant pot in “Soup” for 2 hours
- Once the soup is done, remove bones from the ribs and cut in slices, add more salt if needed. Filter out all ingredients and set aside
- Cut jalapeño and fresh red chili pepper into slices, set aside
- Cook iceberg lettuce in hot water for 30 seconds, set aside
- Cook fresh noodles in hot water (around 6 minutes), then rinse in cold water. Set aside
- Put noodles in a bowl then beef and lettuces on top of the noodles. Sprinkle red chili pepper, cut scallions and jalapeño pepper, then fill with clear soup. Ready to serve.
