Steamed salmon and green salad

Ingredients:
- salmon fillet
- green salad
- oil
- salt
- vinegar
Add some nuts if needed
Ingredients:
- 1 salmon fillet (about 150-200 grams)
- 3 cups of mixed green salad (lettuce, spinach, arugula, etc.)
- 2 tablespoons of olive oil
- 1 tablespoon of vinegar (balsamic or apple cider vinegar works well)
- Salt to taste
- A handful of nuts (walnuts, almonds, or pine nuts), toasted if preferred
Instructions:
- Prepare the Salmon:
- Season the salmon fillet with salt.
- Set up a steamer in a pot with a little water at the bottom. When the water is boiling, place the salmon in the steamer basket.
- Cover and steam the salmon for about 7-10 minutes, depending on the thickness. The salmon should be opaque and flake easily with a fork.
- Prepare the Green Salad:
- Wash the mixed greens and spin them dry.
- Place the greens in a large bowl.
- Toast the Nuts (optional):
- If you’re using nuts and prefer them toasted, place them in a dry pan over medium heat.
- Toast them for a few minutes until they’re golden and fragrant. Keep an eye on them to prevent burning.
- Remove the nuts from the heat and let them cool.
- Make the Dressing:
- In a small bowl, whisk together the olive oil, vinegar, and a pinch of salt to taste.
- Assemble the Salad:
- Once the salmon is steamed, let it cool slightly and then flake it into large pieces.
- Add the salmon to the green salad.
- Pour the dressing over the salad and salmon, and toss gently to combine.
- Sprinkle the toasted nuts over the top for a bit of crunch.
- Pack for the Workplace:
- If you won’t be eating the salad immediately, pack the dressing separately and add it just before eating to keep the greens crisp.
- Place the salad in an airtight container and bring a fork or spoon to enjoy your meal.
This salad combines the heart-healthy fats of salmon and nuts with the freshness of green salad, dressed in a simple vinaigrette, making it an excellent meal to enjoy at work.
