Braised Chicken Wings with Shiitake Mushrooms in Oyster Sauce 蠔油冬菇炆雞翼
- Soak 8-10 shiitake mushrooms in water until soft, remove stem set aside
- Marinate chicken wings with 1 Tbsp of soy sauce, pinch of white pepper, 1 Tbsp of cornstarch and 1 Tbsp of oil for an hour.
- High heat cooking pan with 1 Tbsp of oil, pan sear chicken wings to golden brown on both sides (around 2-3 minutes each sides)
- Medium heat claypot with 1 Tbsp of oil
- Add 3 cloves of garlic and 2 slices of gingers until turn brown
- Add shiitake mushrooms and chicken wings cook for few minutes
- Add 1 Tbsp of soy sauce, 1 tsp of dark soy sauce, 1 Tbsp of cooking wine, 1 Tbsp of oyster sauce, 1 Tbsp of sugar, 1 cup go chicken broth and 1 cup of hot water
- Close the lid cook for 15 minutes
- Open the lid and turn to high heat to reduce sauce for few minutes
- Add few cut scallions and ready to serve
