Claypot Chicken with Mushrooms and Broccoli
- Cut 3 chicken breast into an inch cube size
- Marinate chicken with 1 Tbsp of soy sauce, pinch of white pepper, 1 Tbsp of cornstarch mixed with 1 Tbsp of water. Mix well then 1 Tbsp of oil for an hour
- Soak 8 pieces of shiitake mushrooms in water until soft, remove stem and set aside
- Cut 2 cups of broccoli, set aside
- High heat cooking pan with 1 Tbsp of oil, add chicken cook to golden brown on the outside. No need to cook through, take it out set aside.
- Low heat claypot with 1 Tbsp of oil, add 3 thin slices of ginger and 2 star anises
- Add mushrooms slow cook for a minute, then add 1 Tbsp of soy sauce, 1 Tbsp of oyster sauce, 1 Tbsp of sugar, 1 Tbsp of cooking wine, 1 cup of chicken broth and 1.5 cup of hot water.
- Turn to medium heat cook for 10 minutes, then add chicken cook for another 8 minutes
- Add cut broccoli and scallions continue cook for a minute
- Add cornstarch mixed with water to thicken the sauce if needed
- Add 1 tsp of sesame oil, ready to serve
