Scallion Oil Noodles 蔥油涼麵
- Boil 6 oz of fresh noodles for 6 minutes and rinse it in cold water, set aside
- Cut 1 cup of cucumber into strips, set aside
- Mixed 1 Tbsp of minced garlic, half Tbsp of minced ginger, 3 pieces fresh cut red chili pepper, 1 Tbsp of Szechuan chili oil, 1 Tbsp of sesame seeds and 3 cut scallions strips in a bid bowl
- Boil 2 Tbsp of oil, pour oil into big bowl when its hot
- Add noodles, cucumber and 1 Tbsp of soy sauce, pinch of sugar and white pepper powder
- Mix well and ready to serve
